Creation of the Wildman Mini Breakfast Quiche

Today was day #3 of hubby and I counting calories and walking. We’re determined to each lose 20 pounds in 6 months.

After a nice 3 mile walk this morning (16 minute/mile), I decided to prep some mini quiches that we could just pop in the microwave to heat up during the work week. They came out great, and are only 99 calories each! Try adding salsa instead of the diced tomatoes for an extra kick!

Wildman Mini Breakfast Quiche

Wildman Mini  Breakfast Quiche12 large eggs (or equivalent egg whites/Egg Beaters)
4 oz Almond Breeze Unsweetened Vanilla (or skim milk)
1 tsp Garlic Powder
1 tsp Pepper
1 cup chopped green peppers
1 cup chopped onions
1 can diced tomatoes (I used Hunt’s Fire Roasted Diced with Garlic)
2 cups diced chicken


Beat eggs with milk
Add in remaining ingredients and mix thoroughly
Pour into 1/2 cup muffin tins, leaving a little space for overflow
Bake in 350 degree oven for 45 minutes
Makes 12+ quiches

21 Day Fix Equivalent

Serving Size:2 quiches (1 cup)
2/3 Green (peppers, onions, tomatoes)
1 1/3 Red (1 egg + 1/3 red of diced chicken)
Almond milk is very marginal; less than 1/5 of Yellow

Wildman Pico de Gallo

pico de gallo

Are you ready for EASY and HEALTHY pico de gallo (a fancy word for salsa that’s BETTER than regular salsa)?! I prefer chunky pico over regular ole’ runny salsa!


4-5 ripe tomatoes
1 small onion
1 clove garlic or 1 tsp minced garlic
1-2 jalapeno peppers
6-10 sprigs fresh cilantro
1 Tbsp. fresh lime juice
1 Tbsp. olive oil
Sea salt


  • Finely chop tomatoes and onion. Remove seeds from jalapenos (or leave in for hotter pico) and finely chop.
  • Mince garlic (if using whole cloves) and chop cilantro.
  • (or throw it all in a food processor – WAY easier!!!)
  • Didn’t use a processor? Mix well.
  • Salt to taste.
It takes a while for the flavors to blend…it will taste even better tomorrow than it does today!

This is a photo of our most recent pico de gallo day (we’ve eaten half of the large container with the green lid already!), using mainly the tomatoes, onions and jalapenos from our garden. Doesn’t this look YUM?! What are you waiting for?! Go make some!!!

I’ve realized that I need to grow a lot more ingredients for pico next year!

Sooooo….are you STILL going to drink it anyway???? If so, why not make your own, like this awesome version from Diethood.com:

    • 1/2 cup milk, whole, 2%, or skim
    • 1 tablespoon pumpkin puree
    • 1 teaspoon light brown sugar, packed
    • 1/4 teaspoon pumpkin-pie spice
    • 2 teaspoons pure vanilla extract
    • 1 to 2 shots of espresso or 1 cup of hot brewed strong coffee
    • sugar or Stevia, to taste
    • whipped cream and nutmeg, to garnish


  • In a saucepan whisk together milk, pumpkin puree, and light brown sugar.
  • Cook over medium heat, stirring frequently, until hot and steamy.
  • Remove from heat, whisk in the pumpkin-pie spice and the vanilla.
  • Continue to whisk until frothy.
  • Pour into 2 coffee mugs about half way up, then add in the espresso or coffee.
  • At this point you can add some granulated sugar, to taste.
  • Garnish with whipped cream and a sprinkle of nutmeg.
If using Microwave
  • Pour the milk, pumpkin puree, brown sugar, pumpkin-pie spice, and vanilla into a microwave-safe bowl.
  • Cook for 1 minute to 1 minute 30, or until the milk starts to rise up and is frothy.
  • Pour into mug, add the coffee, garnish with whipped cream and nutmeg.
